Every cup has a story. And no, we’re not talking about an Instagram story here… we tells of a real journey, from the red earth of a field in Ethiopia to your kitchen counter, one November morning.
Here's what lies behind every sip of specialty coffee.
1. It all starts with a cherry
Yes, coffee is first and foremost a fruit. The beans you grind every morning are actually the seeds of a small red (or yellow) fruit called a coffee cherry.
These cherries grow on coffee trees, often in mountainous, humid, and sunny regions, under specific conditions that directly influence their flavor.
2. Carefully hand-picked
This sorting, done right in the field, ensures that only ripe cherries (the ones with the highest sugar content) will be processed. And that’s where the magic begins.
3. Post-harvest processing
This is where growers decide how to “process” the cherries in order to to remove the seeds.
The methods have a significant impact on the final flavor:
Washed method : clean, crisp, with more acidity
Natural Method : fruity, funky, a little wild
Honey Method : somewhere in between—mellow and complex
Each method requires expertise, patience… and often quite a bit of sun.
4. Drying, resting… then roasting
Next comes roasting… a key step. This is where a roaster (like our partners’) fine-tunes the coffee’s profile: fruity, chocolatey, intense, mild… This is also where we determine whether it will be perfect for pour-over, espresso, or cold brew.
5. Packed, shipped… and enjoyed
And that’s when, finally, you take over. The grind, the method, the water, your favorite cup… You become the final step in the journey.
…
Good coffee isn't just a drink. It's a series of human actions, careful choices, and passion at every step.
When you choose a specialty coffee, you’re choosing to honor that journey and to appreciate it for what it’s truly worth.
